Chardonnay has been a favourite varietal for both Adriaan and Lara for many years because of its depth of character, inherent complexity and versatility. Chardonnay, however, fell out of favour with many consumers in years past, but after a few years of travelling, Adriaan and Lara realized that the world was finally ready for the varietal to redeem itself. They are excited to champion this redemption, forever steered by the Hand of Fate.
California produces some of the best wines in the world, with Napa leading the charge. Adriaan and Lara believe that the best Chardonnay grapes can be sourced from the cooler regions surrounding Napa such as Los Carneros. They were very excited to find grapes with the right balance of acidity, minerality and fruit in a beautiful block of vineyard in the Southern-most part of the Napa Valley with cool air drawn in from the San Pablo Bay to preserve the acidity and just the right amount of sun to develop those complex characters. Very subtle hints of French oak and well controlled malolactic fermentation was used to highlight the natural beauty of these grapes.
Adriaan and Lara believe that South Africa produces some of the best Chardonnay grapes in the world and that the region has the potential to become known as the leader in the production of premium Chardonnay in the New World. Different appellations within the country also give very diverse profiles and it is with that in mind that they decided to source grapes from two appellations: one known for its crisp, mineral tones and the other renowned for its full-bodied, fruit forward profile to produce a well-balanced, complex Chardonnay. The beauty of the wine is further emphasized by the subtle use of a mixture of new and older French oak and a controlled amount of malolactic fermentation.
